Good afternoon friends, I hope that you are enjoying a lovely Friday and counting your blessings. This morning we awoke to temperatures below 70 and honestly it has been a couple of months since that happened here at home. I had already made up my mind that today would be a cycling day instead of running but I must say that I sure was tempted to run! My body performs as well as my mind much better when it isn't quite so hot. They both tend to be in a battle with one another when it is warmer instead of cooler.
As I was getting ready to head out for a long bike ride, I noticed on Runner's World that today was National Lasagna Day. Pasta and whole grains are both good things to feast upon when your an athlete. Now that is a crazy thought but not one of my own, you see my sweet friend Ginny last week while we were enjoying a hike together she informed me that now I am an athlete. Hmmm...and yes my body does well when I intake whole grains. Can you guess where my mind was a good part of the morning as I was riding my bicycle?
You guessed it, LASAGNA!
I decided to "wing" it and make up my own recipe today and Girl, was it ever divine!
Yolanda's Vegetable Lasagna
9 dry whole wheat lasagna noodles
3 small zucchini, peeled and halved, then sliced
2 carrots, peeled and sliced about 1/4" thick
1 onion, diced
2-3 cloves of garlic, diced
2-3 stalks of celery, sliced
red, orange and yellow bell peppers, sliced into 1/4" slivers
olive oil
oregano, basil & crushed red peppers to your tasting
1/2 of a container of fresh raw spinach
8 oz of raw milk cheddar cheese
prepared spaghetti sauce
1/4 to 1/2 cup water
Saute' in oil all vegetables and seasonings for about 20 minutes.
In a 8x8 glass baking dish prepared with an extremely light coating of grapeseed oil, layer sauce, noodles, vegetables, sauce, noodles, 1/2 of cheese, all of spinach, sauce, noodles, vegetables, sauce and cheese. Cover and bake in 375 degree oven for 45 minutes, un-cover and bake another 15 minutes at 400 degrees.
This was by far the best vegetable lasagna that I've ever eaten, at home or in a restaurant, it was just simply that good! Oh and by the way, if you've asked me recently for prayer, I also prayed for you by name, and circumstance as I rode my bicycle this morning. God hears our prayers, and He answers them according to His will. His best is what we are after...I know I sure am, only His best.

I haven't had lasagna in years and obviously need to change that asap
