
Yolanda's Oven-roasted Vegetable Burritos
2 zucchini, washed and sliced about an inch thick, not peeled!
1 large white onion, cut into chunks
1 butternut squash, peeled and cubed into bite size pieces
1/2 red bell pepper, cut into chunks
1/2 orange bell pepper, cut into chunks
2 jalapenos, cut in half, seeds removed, cut into chunks
1 tsp of cardamon seed
1/2 tsp of coriander seed
1/4 tsp of cajun seasoning
1/4 tsp of crushed red pepper flakes
a nice size piece of rosemary, pulling the leaves off of the stem
a good healthy splash of grapeseed oil
Place all of this in a large bowl and toss well along with a good helping of grapeseed oil. Place in an oven proof baking dish or clay pizza pan. Bake at 425 degrees for 20 minutes, stir then bake for another 15.
Spoon onto a flax seed, sprouted grain, or whole wheat tortilla that has a slice of raw goat milk cheese already inside so the vegetables cover the cheese. This will nicely melt the cheese as the vegetables are hot! DELICIOUS! Oh my, I just made this recipe up and both my Man and I said it was a hit!
I also think this would be great served on top of a bed of brown rice. Of coarse, any vegetables that you would normally oven roast would be divine. Next time I think I'll add fresh asparagus and perhaps an eggplant. If you try, would you let me know what you thought of it?

What was left of the vegetables I used today at lunch on a whole wheat/honey/flax seed pizza crust that I made. On my Husband’s 1/2, I added shredded chicken that I had baked earlier in the week.
