Granola Breakfast Pie



This was delicious and I look forward to having it as a snack after either a run later today or a long bicycle ride. Either way, it will be great for re-fueling my body!



1 1/2 cups of oatmeal , extra thick rolled oats or large flake
1/2 cup of quinoa, and I prefer the "red"
1/4 cup ground flax
1 tsp cinnamon
1/2 tsp cardamon
1/4 tsp sea salt
1 tsp aluminum-free baking powder
1/2 cup of dried fruit, I used 1/4 cup of raisins and 1/4 cup of currants NOT SWEETENED
1 whole egg
1/2 cup unsweetened fruit juice, I used Organic Mango Nectar
1/4 cup almond milk, unsweetened
1 tbsp honey
1 tbsp olive oil
1/2 tsp pure vanilla

Preheat oven to 350 degrees. Lightly oil pie plate. In a medium size bowl place oatmeal, quinoa, flax, all spices and dried fruit, stir. In a smaller bowl whisk: egg, fruit juice, almond milk, honey, olive oil & vanilla. Pour the wet ingredients into the dry ingredients and stir. Pour into pie plate and bake for 20 minutes.

Remove from oven and let cool about 5-10 minutes. Slice and either eat as is or place in bowl and pour additional almond milk for a warm satisfying hot cereal. With what is left, cool completely, place in an airtight glass dish and use as a granola bar or cold cereal the next day.


While my Granola Breakfast pie was baking this morning, I lightly oiled a glass custard cup and added an organic brown egg, baking at 350 along side the pie for the last 15 minutes.



next time I will make these additions:

1/2 tsp ground ginger
1/2 cup of raw coconut large flakes
dried apricots or dried unsweetened cherries
1/4 cup of chia seeds
1/4 cup of chopped pecans or walnuts

I also plan on topping with a small layer of fresh almond butter on my bar for added flavor and nutrients later today.
