Blueberry Breakfast Pie

My love for cooking began at a very early age, honestly I can't ever remember not cooking or digging through recipes. My favorite thing still to do today, is to be able to walk into a friends kitchen and be given permission to dig through her recipe card file. That is where our tried, true and favorite recipes generally lie. When my Grandmother moved to the nursing home I acquired her glass bread pan and her handwritten recipes in a steno note pad. Later when my Mom passed away I was blessed to have been given her rolling pin and recipe box. These are gifts that I truly do treasure. I also participated in every class that was offered in 4-H for cooking as well as in my high school. My husband enjoys my kitchen abilities as well as my step-son. When Brad was in high school, he had a substitute teacher one day in his shop class. The instructor asked them to share something about themselves, when it came to Brad's turn he shared, "At our house we never have the same meal with-in 30 days.". That was true, I love to try new dishes as well as favorites.


I'm in a new season of cooking at our house once again, went from a single kitchen, to married with a step-son, then just the two of us, and now I am having to incorporate more vegetarian and raw dishes to help alleviate the pain due to an auto-immune disease. So today, I share a raw dish that came from a dear friend of mine. I've made this from time to time not even realizing until last week that it is totally raw and good for my body. It is so delicious and nutritious.





Blueberry Breakfast Pie



2 cups of raw almonds

1/2 cup of fresh pitted dates that you have cut in 1/2

1/4 cup of water

5 cups of blueberries

2 bananas






In your food processor with the s blade, pulse/grind up the RAW almonds, fresh dates and water. When this holds together, press into a pie plate or shallow casserole dish. Set aside.




In your same processor add 4 cups of blueberries and 2 bananas. Pulse/process until it has the consistency similar to yogurt. Then fold in by hand the other cup of blueberries. Pour this onto your crust. Cover and refrigerate at least 3 hours or overnight.


**You can purchase raw almonds at your local health food store. They have not been roasted nor any salt/seasonings/preservatives added. I prefer medjool dates as they are fresher and healthier for you, I've been able to locate them at Sam's and the health food store.



I like to serve this with a glass of fresh carrot juice that I've juiced myself.
